In the short time that it has been open Bow Truss has stayed true to its simple philosophy of making specialty coffee roasting more approachable. For the Lakeview coffee roaster this has meant a strict menu focused on pour-over coffee, espresso-based drinks and a surprising lack of snacks.

This weekend that’s all about to change: Bow Truss has partnered with Rustic Tart to host their first Pop-up on Saturday, July 28th from 8:30am to 1:30pm. This temporary partnership is a perfect solution: it lets the Bow Truss employees focus on what they are good at (roasting coffee beans) while providing customers with an unexpected treat.

Rustic Tart is a Chicago-based subscription pie company that creates handcrafted free-form pies using seasonal fruit from local farmers. In the past, they’ve been seen at Dose Market and on Chicago’s foodie newsletter The Tasting Table but this collaboration with Bow Truss will mark their first Pop-up shop. 

Stop by Bow Truss this Saturday for slices of pie, full tarts and delicious coffee. What a delightful summer pairing.
